Potato Soup...

Potato Soup

Ingredients:

5 lb bag potatoes (peeled & cubed)

1-2 carrots (peeled & chopped)...I don't put these in

1 onion, minced...I use dried onions

3 chicken bouillon cubes(or you could use chicken broth)

1 can cream of chicken soup

½ cup milk

1 stick margarine(i never use this because you don't really need it)

½ lb velveeta

8 oz sour cream

Salt & pepper

Toppings (cheese, bacon bits, sour cream…)

Directions:

Put potatoes, carrots, onion, chicken cubes in large pot. Add water to cover. Bring to boil. Cook until potatoes are done. Pour out about ½ of water, add soup, milk, margarine, cheese, salt & pepper. Cook until cheese is melted. Add sour cream before serving.
